Ingredients:
DOUGH
- 350 g flour
- 165 ml water
- 5 g instant yeast
- 40 ml sunflower oil
- 5 g salt
- 12 g granulated sugar
CHICKEN MIXTURE
- 15 ml olive oil
- 350 g chicken breast
- 2 g coriander powder
- 3 g turmeric powder
- 2 g cayenne pepper powder
- 3 g onion powder
- 3 g garlic powder
- 2 g cumin powder
- 125 g yellow onion
- 75 g red bell pepper
- 75 g zucchini
- 100 g carrot
- 1 chicken stock cube
- 150 g grated cheese
GARNISH
- 1 egg
- 25 g grated cheese
- green olives
Recipe:
- In a large bowl, mix together flour, yeast, sugar, salt, sunflower oil, and lukewarm water. Knead the mixture for 10-12 minutes until it forms a smooth dough.
- Cover the dough and let it rise in a warm place for about an hour, or until it doubles in size.
- In a skillet, heat olive oil over medium-high heat. Add the chicken pieces along with coriander powder, turmeric, cayenne pepper, onion powder, garlic powder, and cumin powder. Stir well and cook for 3-4 minutes.
- Add bell pepper, carrot, yellow onion, and zucchini to the skillet. Stir and crumble a chicken stock cube over the mixture, cooking for an additional 4-5 minutes. Add grated cheese and cook for another minute. Allow the chicken mixture to cool.
- Punch down the risen dough and divide it into three equal parts, each weighing around 185 grams.
- Roll out each dough portion on a floured surface into a long oval shape, about 50×15 cm.
- Spread your preferred sauce along the length of the dough, then evenly spread a portion of the chicken mixture on top. Roll the dough tightly to encase the chicken mixture completely. Slice the roll into pieces.
- Arrange the rolls on a baking sheet lined with parchment paper. Brush them with a beaten egg and sprinkle with shredded cheese and green olives.
- Bake the rolls in a preheated oven at 200 °C (390 °F) for 12-18 minutes, or until they are golden brown.
